EMU decided to end their spirit week off with a bang by gathering students, families, and friends to come together and partake in some live music, amazing food, and good old-fashioned family fun. I had heard some good things about the local food trucks that have been willing to serve food to people after they participated in a long day of fun, and decided to try something new. There were a lot of good options around to choose from, but I decided to try Mashita, a Korean-based food truck. The menu looked amazing, and I really enjoyed the variety of food they offered and the authenticity of each dish. Everything sounded amazing, and it took me a while to decide what I wanted to try. But after a lot of thinking, I decided to go with sweet and spicy tofu with wild grain rice, and lettuce on the side. This dish is a very popular dish within Korean culture, and after hearing about this dish countless times, I knew I couldn’t pass up an opportunity to try it. 

The person working there was very kind and you can just tell by how he presented himself and ordering my food went very smoothly. 

Receiving my order, the plating of the food was beautifully done, and everything looked cooked and prepared to perfection. Taking my first bite, my mouth was an instant hit with such amazing flavors and textures. The softness of the rice and tofu combined with the crunchiness of the lettuce was a perfect combination, the sauce had the perfect ratio of sweet to sour. The portion size was also very nice; I did not feel extremely stuffy or hungry after eating, which showed me that the cooks know how to cater to a crowd very well. 

Overall, if I had to rate this dish from a 1(not the great) to 10 (amazing dish), I would give it an 11 because it met all my expectations and then some! This is a dish I definitely would want to try again, If you are like me, and have an interest in trying new foods full of different flavors or dishes that originated from different cultures, then I definitely recommend you to try the Mashita food truck, and maybe you will see me there when you do because I definitely intend to visit this food truck again in the near future.
